Yummy date and apple muffins*
Makes 12 regular sized muffins
1 cup self raising flour
1 cup wholemeal flour
1 teaspoon baking powder
2 teaspoon mixed spice
½ cup brown sugar
1 cup grated apple
1/2 cup chopped dates
1 cup low fat milk
2 tablespoons oil
1 egg
Method
1. Place the wholemeal flour, self raising flour, mixed spice, baking powder, brown sugar, apple and raisins in a bowl and mix well.
2. In another bowl mix the milk, oil and egg together.
3. Gently mix into the dry ingredients.
4. Three-quarters fill greased standard muffin pans.
5. Bake at 200ºC for 15-20 minutes or until golden brown.
These muffins are not only tasty, but they are low in fat and sugar, and high in fibre and a good source of vitamin C. High fibre diets keep the digestive system healthy and may reduce blood cholesterol. Vitamin C improves iron absorption and is involved in brain neurotransmitter production.
