Healthy pizza
Makes one large thick crust pizza
Ingredients
Pizza base
1.5 cups of plain flour
1.5 cups of wholemeal flour
1 tablespoon of live yeast
½ teaspoon of sugar
1 teaspoon of salt
1 cup of warm water
1 tablespoon of oil
Topping
1/2 diced onion
50g sliced black olives
1 tomato
60g tomato paste
4 or 5 white button mushrooms
½-1 cup grated low fat cheese (eg edam)
About 100g cooked skinless chicken, or lean beef (or whatever you have)
Method
1. Combine yeast, sugar, and water in a small bowl and leave for 15 minutes or until frothy.
2. Sift flour into large bowl. Add salt, oil, and yeast mixture. Combine.
3. Knead dough on lightly floured surface for 5 minutes.
4. Put dough into a lightly oiled bowl, cover with a tea towel and leave in a warm place until dough doubles in size.
5. Roll out dough and place in a pizza pan.
6. Top dough with ingredients
7. Bake at 200C for 20-30 minutes until golden
8. Serve immediately with salad or cooked veggies
