Chickpea Vindaloo
This is a super quick and nutritious meal, which is a little on the spicy side, but if it's too hot just add a little more tomato puree.
Ingredient
1/2 can tomato puree
1 can chickpeas
1 packet vindaloo paste
1 chopped onion
1 cup jasmine rice
1/4 cup water
Method
Heat frying pan on medium heat. Add onions and cook until soft. Add vindaloo paste to onions. Add chickpeas and tomato puree. Bring to boil. Cover and allow to simmer for 15 minutes. While the curry is cooking, cook the rice according to the packet instructions. When is everything is done, serve immediately.
